Easy sweet potato bread
I think I'm going to make this little reminder at the beginning of each of my recipes : I'm far from being a skilled cook, so I prefer easy and quick recipes, that are hard to screw up... Because when I'm in the kitchen, anything can happen...
Anyway, this bread recipe is so easy ! Of all three recipes that I have posted so far, this one requires the least effort.
It is a dish, but can in fact be used as a side dish and replace the classic white bread (which I think you should cross off your shopping list...)
You're probably used to it by now (or no t!), but this bread is very healthy, gluten-free, has a low glycemic index and is therefore perfect for people who have diabetes. It is paleo and veggie friendly, and finally, it is, of course, a friggin' killer !
Sweet potato has a subtle taste and is much more interesting from a nutritional standpoint than the regular potato : lower in carbohydrates and richer in minerals and vitamins.
As for my previous recipes (here and here), here are my recommendations regarding the choice of ingredients and supplies :
Mother Nature is your friend ! As much as possible, use organic produce. The goal here is not to show off, but to make sure we are not ingesting lots of pesticides.
Stop using Teflon, non-stick or silicone moulds (with high heat, microplastics get in the food, which is potentially carcinogenic in the long term) and favour stainless steel or glass.
Go for acacia honey, because it has a low glycemic index (around 30, so it doesn't raise your blood sugar and won't abuse your poor little pancreas...).
Ingredients for 4 people :
200g sweet potatoes
100g gluten free flour (rice, almond, chestnut...)
1 tbsp acacia honey
1 tbsp pumpkin seeds
1 tbsp apple cider vinegar
1 tbsp baking soda
100ml coconut milk
A baking pan, that's it !
Preheat your oven to 180°C and coat the pan with butter or coconut oil.
Peel the sweet potatoes and cook them in water, then purée them.
Mix all ingredients until smooth.
Poor the batter into the baking pan, and sprinkle with pumpkin seeds.
Bake for 35 minutes at 180°C.
Two pieces of advice : enjoy cold ! If you want a softer bread, you can add baking powder.
