Apple and almond cake for the lazy !


I don't make it a secret, when it comes to getting your hands dirty in the kitchen, I am not super enthusiastic... Which I know may seem contradictory given my attraction to nutrition... But what can I say, I'm far from perfection ! And I'm not trying to find an explanation for all of my contradictions either !

Anyway, the recipe I am sharing today is perfect if you find yourself to be anything like me ! Super fast and easy to prepare, it will take you no more than 20 minutes to put it in the oven. Very healthy as well, of course ! Gluten-free, paleo friendly, low glycemic index, can be made vegan, and all the good stuff you are starting to know by heart if you've been reading my previous posts =P


Just like I did for my previous recipe, here are my recommandations regarding the choice of ingredients and equipment :


  • As much as possible, use organic produce. Not because it's cool or anything, but only because it's healthier not to swallow pesticides everyday...

  • Stop using Teflon, non-stick or silicone moulds (with high heat, microplastics get in the food, which is potentially carcinogenic in the long term) and favour stainless steel or glass.

  • Use coconut sugar, date powder or acacia honey to sweeten your pastries, because they have very low glycemic indexes (around 30, so they do not raise your blood sugar and will not abuse your poor little pancreas...).


This cake is perfect for birthday parties !

Ingrédients for 4/6 people :

  • 250g gluten-free flour (preferably rice or chestnut ; avoid coconut flour and flaxseed flour because they absorb all the liquid fraction of the batter, or use them in a mix with a predominance of rice flour and only one to two spoons of flaxseed or coconut flour).

  • 80g almond powder

  • 2 big apples.

  • 3 eggs (unless you're going for the vegan recipe)

  • 50g coconut sugar (I personally used date powder for the first time, I will give you my feedback on it)

  • 200 mL non-dairy milk (rice, almond, hazelnut...)

  • 50g butter (or coconut oil for a vegan cake)

  • 1 sachet of baking powder


Supplies

  • Just a baking pan !


Directions :

  1. Preheat the oven to 180°C and coat the pan with butter or coconut oil.

  2. Mix all ingredients until smooth.

  3. Peel and cut the apples into small pieces and add them to the batter.

  4. Pour the batter into the pan and bake for 45 minutes at 180°C. And voilà !


My second go at this recipe, slightly overcooked, but still delicious !

Perfect for a little snack any time of the day !
